Executive Production Chef

- Location: Ottawa International Airport
- Compensation: $75,000 / year + bonus potential
- Schedule: Full-time including evenings, weekends, and holidays
Lead Culinary & Operational Excellence Across Commissary & Airport Restaurants
What You’ll Do:
- Lead daily operations for both the central commissary and multiple airport restaurant kitchens
- Oversee production, distribution, inventory, and cost control with a focus on operational efficiency
- Drive a strong culture of food safety and sanitation, ensuring compliance with HACCP, local health regulations, and company standards
- Monitor food handling, storage, and prep processes to ensure product integrity and consistency across all locations
- Ensure proper labeling, rotation, and traceability of all ingredients and prepared foods
- Conduct regular food quality audits and kitchen inspections to uphold recipe accuracy, portion control, and presentation standards
- Partner with the Quality Assurance and Operations teams to resolve safety or quality issues and ensure corrective actions are followed
- Train culinary team members on safe food handling procedures, allergen awareness, and cross-contamination prevention
- Support accurate documentation and recordkeeping for temperature logs, equipment checks, and sanitation audits
- Collaborate with restaurant managers and front-line teams to align on food quality expectations and guest satisfaction
- Prepare and oversee daily, weekly, and monthly production schedules and reporting
- Lead and develop commissary and kitchen teams with a focus on accountability, excellence, and continuous improvement
What We’re Looking For:
- Minimum three years of culinary or foodservice management experience, preferably in multi-unit or high-volume environments
- Strong working knowledge of food safety standards and kitchen operations including HACCP, ServSafe, and local health codes
- Demonstrated ability to implement and maintain food safety systems across multiple locations
- Minimum three years of food purchasing and inventory experience
- Bachelor’s degree preferred or equivalent experience in culinary management
- Food Handler’s Permit required, ServSafe Certification preferred
- Effective leadership, coaching, and communication skills
- Proficient in Microsoft Office and inventory or kitchen software systems
- Ability to work in varying temperatures and lift up to 50 lbs
- Flexible availability including nights, weekends, and holidays
- Must meet TSA and FAA background check requirements
